Various boffins have already done the heavy lifting; the "filtering"
involves installing a program/suite that does the filtering for you.

Amavisd (which uses Spamassassin and Razor for the actual filtering)
worked
pretty well for me, although I got sick of maintaining my own mail server
and just moved to the free version of Google apps.
