You don't need to understand it in order to use it.

My mailfeed is filtered at server level which stops most spam, a little 
gets through (a few mailing lists I am subscribed to get spammed). I use 
POPfile, a Bayesian filter, to deal with this, you tell it which 
category (I use two, good and spam, others use more) an email is in and 
it will look for consistent differences between the different categories 
(e.g. Anything with VIAGRA in the message text is 99% likely to be spam, 
anything with plesiomorphy in the message text is 100% likely not to be 
spam &c.) it then calculates which category the email is probably in, 
after a while it becomes very accurate at spotting spam, the filter has 
generated a set of rules for distingui****ng between the various 
categories. Once you have trained the filter it does its thing, you 
don't need to worry much about the details of how it does it.
