It's a show I'd watch, although obviously totally non-canon, but then I
liked the Droids and Ewoks animated shows (and I'm still waiting for
the proper DVDs!). :-)
The Muppet Babies did do at least one Star Wars episode, as did
RugRats. Plus the parody CD-ROM "Star Warped" does have a "Time
Machine" section where you can see younger and older versions of the
characters.
