It might be fun indeed, but that's the kind of thing I might enjoy as some
kind of extra project, a mini-series or something. It's not the basis of a
whole new era of Trek. It's very difficult to create stories, especially
with expansive concepts of the type movies require (the stories need to be
"bigger" than TV) when the future is already mapped out.

For instance the recent BSG TV-movie Razor had a sequence where there was
this thing abut Starbuck maybe having to sacrifice herself. Except it
didn't
work because we've already seen her future and she's still alive after the
events of the movie. Any kind of threat tension to Pike or the Enterprise
would be ruined by the knowledge of what happened in the future.

You can argue that that's true anyway; we know Kirk won't be killed in an
episode of TOS because he has to "be here next week". But it's easy to
suspend one's knowledge of that while watching because  that's real world
knowledge external to the fictional universe you're watching. But when
he's
definitely "here next week" *within* the fictional universe- because we've
already seen the fictional future- the whole thing falls apart.
