It's a matter of whether the movie was shot with black and white in 
mind. A color movie viewed in black and white almost never looks as 
good as a black and white movie viewed in black and white. The 
shadows are less dramatic in the b&w display of a color movie. In 
the 1930s and 1940s they really knew how to use black and white, 
light and shadow.

If the director of the "Mist" shot it with black and white in mind, 
it probably looks good displayed in black and white.

But I see what you mean. You wonder if the addition of color, and 
then the changing of that color version to black and white, leaves 
shadings that would not have been in a purely black and white film. 
I wouldn't think the effect would be very noticeable.
