Shooting him had nothing to do with the bet. He was the reason Sayid was 
there...

He was there to shoot her boss. That's why he took the pager to dinner 
when she wanted to leave it behind. Once she contacted him, Sayid was 
going to kill him...but it was all a doublecross - which is why Sayid 
told Ben that "they" knew...which Ben seemed to like.
