Why do you think most people never find their one true love?  Maybe it is 
simply a case of most people finding it very easily while he is the 
exception to the rule.

Angel's curse involved him turning evil and losing his soul if he found 
'true happiness'.  How is that the same curse as a guy being mortal again 
once he finds his true love?  Angel's curse meant he had to avoid love 
whereas Amsterdam's means that he has to seek it out.  Angel is penalized 
for finding love while Amsterdam is not.
