I too like what these stories can offer.  In addition to _The Stand_ ,
some others that I enjoyed (and would recommend to the OP) are:

Miller's _A Canticle for Leibowitz_ 
Brin's _The Postman_ 
Zelazny's _Damnation Alley_ 
Ellison's "A Boy and His Dog".
Brackett's _The Long Tomorrow_

    Matheson's story was empty-Los-Angeles; the recent movie was 
    apparently empty-New-York.
